A spell may be countered any number of times, just most of the time only 1 will resolve as the target on the stack will be gone before any of the other counters get to it.

Generally yes, a counterspell can counter a creature. To clarify the terminology, any card that is on the stack (the zone where cards that have just been played are in as they wait to resolve) is a spell. If the card has the Creature card type, it is a creature spell.
How many times can you cast counterspell?
There are no restrictions on how many spells you can cast in a turn if they have casting times of 1 action or a reaction, subject to having unused actions and reactions. (So you could, potentially, use Action Surge to cast 2 fireballs in 1 turn.)
Is a spell cast if it is countered?

Is counterspell too good for modern?
Counterspell is such an iconic card, and is certainly appropriately powered for Modern. Logic Knot is a much worse version of the card, as is Mana Leak, but where Counterspell will outshine these counterspells is mostly in long, drawn out interactive games where both Logic Knot and Mana Leak go dead.
How does counterspell work?
Counterspell may be used preemptively to prevent the next spell cast by an opponent. When the opponent plays a spell card, Counterspell will activate; the spell will then fail to take effect. Counterspell also prevents the spell from completing its ‘casting’ phase, preventing post-spell casting triggers from activating.
