You can sort unstackable items away from stackable items. However you can’t sort specific unstackable items. You can use a standard hopper sorter: Put all of your items through a hopper line.

Unfortunately the way item sorting hoppers work you need one sorter per item. However, once they’re sorted you can store them however you want, just have two hopper lines after the sorting mechanism, then feed the sorters into whichever line leads to the chest you want them in.

If there is, it is simple to sort all armour, weapons, and tools to a single area. I tested armor stands and unfortunately you can’t remove items without breaking the stand. I think you could pull off something semi-manually, but probably easier to just sort everything else out instead.

Thinking about it some more, it should be reasonably simple to add a pre-sort stage that removes non-stacking items and loads stackables into the main transport line.
