My guess is the drop rate bonus from each ring is likely to be around ~20% (that’s 20% as a bonus multiplier, not additive; e.g. a 1% item would drop at 1.2% with a Plunderer’s Ring, not 21%), giving you ~40% with two. I’ve sort of moved on from the game, having completed my collections, but maybe someone else will be up to trying to confirm this.

The Plunderer’s Ring is almost certainly better for item drops. I have no idea about shard drops (for those of us who only have one Solomon’s Ring or less) and I don’t have a good way to test that without driving myself nuts. Additionally, I had 118 luck with Gambler’s and 114 with Plunderer’s.
