To hide gameplay information, set “Game details” to “Private.” Not even your friends will be able to see the games you’re playing, the games you own, or the games you’ve wishlisted. I know there’s a trick to change the system time to the future while the game is running. Steam compares the timestamp for start and end, and deduces playtime from that. If you re-install, though, it remembers and pops it right back to the top. There’s currently no way to reduce, rest or removed playtime for your games. Found a way, permamently deleting a game from the account works. Some games (l4d2 at least) you can erase the “in game” playtime but it will still show on your profile.
