Do dragon attacks stop after main quest?
It turns off the random dragon encounters, but leaves the quest-based ones and the dragon lairs intact. It can also be installed before the main quest is done – installing it after is just the suggested use. Alduin had to sense it being that the Dragonborn had yet to learn that they had the innate ability to shout and could absorb dragon souls, unlike others that had to learn to shout. The only way Alduin could have known you were Dovahkiin is if he had the ability to sense it.

Yes, there are an infinite number of random quests to do after you done the main story line. So, the game doesn’t end there. The ability to harvest dragon souls has nothing to do with quests, it only has to do with killing the dragons ( there are infinite of them ).
