The game doesn’t update or carry over your progress when you are replaying missions. Decisions made during these missions aren’t saved anywhere. If you want to make another choice, you have to reload a save made before starting a given mission. This can be impossible to do if you don’t have manual saves.
Do you get money for replaying missions?
You can’t gain additional money, or level up your crew as nothing is saved from replaying missions. You can, however, do the heists the second way (as most of them give you two approaches) to attempt the gold medal objectives, which will save if you achieve them.
Can you replay quest?
To replay a side mission, you have to speak again to the NPC who gave the side quest. During your conversation, you will get a dialog option to “Replay Quest”, selecting this will allow you to replay the side mission again.

Upon completion of your first run of the Cayo Perico Heist you will be able to replay it over and over again. This allows you to farm the heist for cash. To replay the heist wait for Pavel to contact you about it being available again.
